If you want to change the font and font size settings, you can do this using the fourth dropdown menu. Black is the default text color, but if you want to change that, you can do so in the third dropdown menu. This will allow you to change the size of the font. You then need to click the second dropdown. If you click the first dropdown, you can change the default font that Gmail will use. You can find this in the top right-hand corner.
